- Boil the pasta according to directions on the package. Drain, then transfer to a large bowl.
- While pasta is cooking, you can make the vegan Caesar dressing. Once done, toss the dressing in the bowl with the cooked pasta until well combined.
- Next, add in the romaine, sliced avocado, halved tomatoes, and roasted chickpeas; toss again until well combined. Add more salt and pepper to taste.
SALAD NOTES:
If you aren’t vegan: feel free to add ¼ cup parmesan (or vegan parmesan) to the recipe as well as grilled chicken. Add ranch-flavored for extra crunch!

CAESAR DRESSING INGREDIENTS:
- 1/4 cup drippy tahini
- Juice from ½ large lemon (about 2-3 tablespoons fresh lemon juice)
- 1 clove garlic, grated or finely minced
- 1 teaspoon of very finely diced capers
- 2 teaspoons caper brine (from the jar of capers)
- 1 teaspoon Dijon mustard
- 1-3 tablespoons warm water, to thin out the dressing a bit to your liking
- Freshly ground salt and black pepper, to taste.
INSTRUCTIONS:
Mix the dressing ingredients together in a small bowl until smooth: tahini, fresh lemon juice, garlic, diced capers, caper brine, Dijon mustard, warm water, and freshly ground black pepper.
- Taste and add a pinch of salt, if necessary.
NOTE:
- Please note that most Caesar dressings are pretty heavy on salt and that's also important in this recipe to bring out the flavor and make it taste like a true Caesar salad dressing. Be generous with your salt and pepper!
