Cauliflower Fried Rice

Organic Paleo Cauliflower Rice with Herbs and Spices

Cauliflower Fried Rice:  Grain Free, Gluten Free, Dairy Free (Low carb and Paleo Approved!)

Serves 6


1 large head of organic cauliflower, grated (or use a food processor)

1 medium organic onion, diced

2 T of coconut oil or ghee

1 organic carrot, grated

1-2 cloves organic garden

½ t. of fresh ginger, grated

1 egg, scrambled

1/3 -1/2 c. coconut aminos

2 T scallions, chopped

Salt to taste

Fresh parsley to garnish


Using a box grater or food processor attachment, grate the cauliflower in to rice-size pieces.  In a large skillet over medium heat, sauté cauliflower and rice until tender, about 8 minutes.  Add in minced garlic and ginger and cook for 2 minutes, or until fragrant.  Stir in coconut aminos into the rice mixture and let the mixture simmer for about 5 minutes. 

When the liquid is absorbed, push the “rice” to the side and cook the scrambled egg in the pan, then gently fold into the mixture.  Add scallions and remove from heat.  Garnish with fresh parsley then enjoy immediately.
